Banana & Sultana Loaf

Great treat for Morning Tea! And great recipe to use that over ripe banana sitting in your fruit bowl!


90g Unsalted Butter
3/4 Cup of Organic Castor Sugar
1 teaspoon of Vanilla essence.
2 Mashed Over-ripe Bananas
80g (4 tablespoon) of Organic Sultanas
2 Large Free Range Eggs
1 & 1/2 Cup of Organic Self Raising Flour (you can use Gluten Free SR Flour)
1 teaspoon of Bi-carb Soda dissolved in 2 Tablespoon of Milk


1. Preheat Oven to 180 degrees & grease proof your loaf pan.

2. Cream butter and sugar, vanilla essence with a mixer
3. Add eggs one at a time to the butter & sugar mixture and continue to beat well with the mixer
4. Mix in the mashed banana & sultanas
5. Slowly fold in the Self Raising flour, alternating with the Milk/Bicarb mixture.
6. Mix well.
7. Turn your completed mixture into a prepared cake/loaf pan.
8. Bake in a 180 degrees oven for 45 - 55 minutes.
9. When cold, you can ice with cheese frosting or if its for the lunch box, just leave it plain or dust with a little bit of icing sugar.
